麵糰
洽發高粉400g.吸水率70%
奶粉10G
速酵4.7G
糖37g.
塩4.7G
奶油40g
優格50g
冰牛奶137CC
蛋60g
冰水33CC
冰水留30-40cc.視麵糰增減
內餡~紅豆餡~
作法
1.**小林攪拌機
用小林12打麵糰:材料我先下溼料再下乾料(除奶油),先L2M2,成糰後下奶油改L3M4分,打到光滑具擴展拉有薄膜即停止.
(**105T麵包機(依比例減量做)(內鍋外也可放冰寶). 將所有材料放入麵包機, 啟動烏龍麵團,塩與速酵對角放,8分後按停止放奶油,再按30揉至麵團具擴展即停止 (其他麵包機只要啟動可以揉麵的程式, 揉15-20分鐘))
2..基發30-40分至1.5倍大,
3.排氣整圓,
4.麵糰分割(一個約67g,),整圓, 蓋上保鮮膜醒10分鐘,紅豆泥餡一個30g,搓圓.
5.每一麵糰手壓圓,包入紅豆泥餡放於圓型紙模內.
7.室温後發40分,表面灑芝麻或杏仁角,預熱180度
8.入爐180度烤5分改170度5分,拿出轉向再烤3-4分~出爐完成^^~
PS:
1.室温後發,表面比較不會變形
2.烤温及麵粉吸水量要視自己的烤箱烤温及麵粉為主喲~
